1 egg yolk
1 tsp lemon juice
1 1/2 tsp white wine vinegar
1 tsp whole grain mustard
large pinch salt
olive oil
extra virgin olive oil
Place all ingredients except oils in food processor fitted with the steel blade and process 1/2 min. Leave machine on and add oil in a slow steady stream, about half and half of normal and extra virgin so it's not too olivey. Stop when mayo has reached the desired consistency ie thick and glossy. Adjust seasonings.
Makes about 1/2 cup.
Update:
If you have a barmix simply put all the ingredients into a plastic beaker with the egg at the bottom and whizz. It'll be done in seconds.
