1 heaped teaspoon Japanese green tea powder
250 ml double cream
50 g unrefined sugar
50 ml milk
1 tsp vanilla sugar
1 tsp agar agar
Put the green tea powder in a sauce pan, add some drops of hot water and whisk into a thick paste. keep whisking and add cream. Add the remaining ingredients except the agar agar, bring to a boil, simmer for a couple of minutes. Leave to stand for 10 minutes. Add the agar agar, whisk and bring back to a boil for two minutes. Pour into moulds and chill for a couple of hours until set.
