harissa

4 tb each cumin and coriander seeds, dry roasted and ground
100 g red chillies
10 cloves garlic
4 tb sea salt
extra virgin olive oil

Blend to a coarse paste in a food processor. This is a famous North African condiment that packs a real punch thanks to the salt. Dynamite with lamb, potatoes, sausages.
