avejan chicken (serves 4)

1 chicken, jointed, well seasoned with salt and pepper
extra virgin olive oil
4 tb white wine
16 cloves garlic, unpeeled

Brown the chicken pieces in the oil. Add remaining ingredients in a roasting pan and roast uncovered at 200'C for about an hour. Adjust seasoning.

This is much tastier than it sounds. Add woody herbs if you want. Delicious with ratatoille.
