lime slice

200 g butter, softened and chopped
250 g (2 cups) plain flour, sifted
30 g (1/4 cup) icing sugar, sifted
1 egg, lightly beaten
6 eggs
375 g (1 1/2 cups) caster sugar
60 g (1/2 cup) plain flour
125 ml (1/2 cup) lime juice
finely grated zest from 4 limes

Preheat oven to 180'C. Grease and line a 23 cm square tin with baking paper. Put first 4 ingredients into a food processor and whiz until a dough forms. Press into tin and cool in the fridge for half an hour. Bake for 25 mins or until pale gold.

Meanwhile whisk the eggs in a bowl, then whisk in everything else. Pour out onto the cooked base and put back in the over for another 20 mins or until set and pale gold.

Cool in the tin, cut into small pieces and dust with icing sugar.

This is my kind of baking- put that food processor to work! Keep a careful eye on it at the end of each baking period. The slice is strong so you don't need much to feel pleasured.
