uncooked smallish chicken pieces or cooked carcasse/leftovers

1 onion, chopped
6 whole peppercorns
2 bay leaves

Cook the onion in a little oil until soft. Add chicken (if uncooked, brown the chicken now), add boiling water to cover + rest of ingredients. Simmer gently for half an hour. Sieve, salt to taste (and reduce if you wish), cool and remove fat when solidified.
